Truffles are the underground fruiting bodies of fungi in the genus Tuber. The fungus wraps itself around the root tips of certain trees in a relationship called ectomycorrhizal symbiosis: the fungus helps the tree absorb water and minerals from poor soil, and in return the tree feeds the fungus sugars from photosynthesis. Choosing Inoculated Seedlings
Seedlings must be inoculated with the correct Tuber species by a nursery, and certification matters because competing fungi such as Tuber brumale colonize roots and produce worthless truffles. Buy from nurseries that document the inoculant, keep trees in their original containers until planting day, and plant in fall or early winter.
Mature trees: water mainly in drought years; excess moisture at harvest rots truffles in the ground.
Reading the Soil
A simple probe test beats a calendar: push a metal rod into the ground, and if it comes out with soil sticking to it, hold off. Truffle soils should crumble, not clump.Host trees are pruned to keep an open, airy canopy that lets light reach the orchard floor.
